Summer finally seems to be on its way (fingers crossed) so what better way to enjoy the sunshine than to dine outdoors.
Here’s a great little smoked salmon recipe that’s so easy to whip up and provides an ideal starter to any alfresco dining experience. If you’re looking for a fresh take on smoked salmon canapés – this is a clever little option too. You can make it from scratch if you’re feeling industrious - or you can save time and money by using our traditional smoked salmon pate!
Halve the avocados. Blend the flesh in a food processor or mash with a fork until really smooth. Add the lime juice and season to taste until you have a guacamole that you’re happy with.
Fill the shot glasses with the smoked salmon pate until ¾ full. Level the surface as much as possible and then fill the rest of the glass with the guacamole mixture.
Then simply place in the fridge until ready to serve.
When ready, take the shot glasses out of the fridge, chop up some of our traditional smoked salmon into very thin strips and use to garnish the tops of the glasses. Add a coriander leaf, serve with crackers and enjoy. The perfect summer dining treat!
