Prawns, horseradish cream and lime vinaigrette smoked salmon salad

We have to admit that we’ve taken this straight from Olive Magazine’s website, as it needs to be tasted by (and shared with) as many people as possible.

Perfect as a quick and easy starter – this is a beautifully simple smoked salmon salad which tastes as good as it does exactly because of its simplicity.

Preparation Time: 20 minutes

Serves: 2

Ingredients

  • 4 x slices of John Ross Jr smoked salmon
  • 10 large cooked prawns - peeled  and with their tails attached
  • 1 tbsp crème fraîche
  • 1 tsp horseradish sauce
  • 1 lime juice and zest
  • Half a tsp clear honey
  • 1/2 tsp fresh root ginger grated finely
  • 2 tbsp light olive oil
  • 2 handfuls of small leaf salad

Preparation method

lend together the horseradish sauce and the crème fraîche, then season to taste. To create the dressing, whisk the honey, ginger, lime juice and lime zest, plus seasoning – then whisk the oil into the dressing mixture. Arrange our divine Scottish smoked salmon and the prawns in two servings. Add a big spoonful of creamy horseradish. Toss the small leaves in your salad dressing and arrange on the salmon base. Drizzle with any leftover dressing – and enjoy!
