Ingredients
- 2 eggs
- 1 large ripe avocado
- 2 Portobello mushrooms
- 5 medium tomatoes
- 200g pack of John Ross Traditional Smoked Salmon
Preparation method
- Pre-heat oven to 180°C
- Slice the tomatoes in half and place on a baking tray with the mushrooms
- Season well and drizzle with olive oil before roasting for 15 minutes
- Whilst the mushrooms and tomatoes roast, halve, peel and finely slice the avocado
- Divide the avocado and the smoked salmon between two plates
- Gently fry the eggs in a little oil
- Plate the tomatoes and mushrooms, and finish with the eggs
