Mini jacket potatoes with hot smoked salmon, sour cream and chives

Serves: 2

Ingredients

  • New potatoes
  • Tub of sour cream
  • Fresh chives, finely sliced
  • Zest of one lemon
  • 160g pack of John Ross Kiln Roasted Salmon with Honey and Mustard Seeds

Preparation method

  1. Pre-heat oven to 180°C
  2. Place potatoes on a large tray and bake for 30 minutes
  3. Once the potatoes are tender, cut a deep cross in each one and pinch open before placing on a serving platter
  4. Spoon sour cream over each potato
  5. Top with flakes of kiln roasted salmon and finish with the chives and lemon zest
