Patria’s tantalising Thai smoked salmon salad

We recently visited Patrie, a Thai restaurant in Bramley, Surrey, and had a wonderful meal cooked for us by its owner, Patria. It was only when we were paying the bill did we realise that she uses John Ross Jr’s traditional smoked salmon!

Anyway, we thought we’d share her fantastic Thai smoked salmon salad recipe as it shows just how versatile smoked salmon can be.

Preparation Time: 5 minutes

Serves: 2

Ingredients

  • 4-5 handfuls of mixed tender salad leaves
  • 250g John Ross Jr smoked salmon
  • 1 teaspoon sesame oil
  • 1 tablespoons lime juice
  • 1 teaspoon lemon juice
  • 4 small red shallots, sliced
  • 2 stalks lemon grass, finely sliced
  • 2 birds eye chillies
  • 2 handfuls of mint and coriander leaves

Preparation method

Place mixed salad leaves on a serving plate.

In a large bowl mixed together sesame oil, lime juice, lemon juice, shallots, lemongrass and chilli. Add the smoked salmon and then toss over a few times. Finally, add the coriander and mint leaves before placing on top of the salad leaves & serve.
